Consider all of the styles and brands of beer on the market today. Now, add in all of the different beers from international brewers. The selection available can be mind-boggling; but what's even more surprising is that all that beer is made from similar brewing systems. It's a system that you can learn and perfect to become your own brew master.

The brewing process is fairly simple, but creating the perfect pint does take a little practice. Here are the beermaking basics:

1. Make a Clean Start: Wash, rinse and sanitize each and every piece of your fermenting and brewing equipment before you begin. Bacteria can easily spoil your home brew, and make you very ill.

2. Measure Carefully. Choose your recipe and follow the measurements exactly.

3. Mix It In: After the boil has stabilized, you'll need to add hops, malt, moss and other flavours or additions that your recipe calls for. Be sure that you have enough of the right ingredients before you start brewing. Most recipes call for boiling water as the first step, followed by the additions of some ingredients. Using the right ingredients in the correct amounts, and adding them in the right order, will make all the difference to your final product.

Keep It Cool: Once your mixture has been prepared, you'll need to let it fully cool. Once it has cooled, you'll add yeast and any remaining ingredients. The mixture will be poured into a fermenting bucket, where it will stay for a period of time. Different types of beer require various fermenting times, so be sure to follow your recipe carefully.

Bottle It Up: When the fermenting process is complete, pour you home brew into clean and sterilized bottles, and cap them securely.

The right balance of sugar, tannin, moisture and nutrients, are vital to create a quality wine, and it just so happens that the grape perfectly fits the bill. This natural balance allows the grape to ferment exactly as it needs to for successful winemaking. However, selecting the proper grape is only the beginning of a successful winemaking journey.

There are of course many different grapes that can be used in different combinations. As the hobbyist becomes more skilled at winemaking they may want to try adding a bit of some other fruits to the mixture to give the wine some extra depth and flavoring. Beer Ingredients

The main ingredients found in beer are water, malted barley, hops, and yeast. There are other ingredients such as flavoring, sugar, and other ingredients that are commonly used. Starches are used as well, as they convert in the mashing process to easily fermentable sugars that will help to increase the alcohol content of beer while adding body and flavor.

Water

Seeing as how beer is mainly composed of water, the source of water and its characteristics have a very important effect on the character of the beer. A lot of beer styles were influenced by the characteristics of water in the region. Although the effect of minerals in brewing water is complex, hard water is more suited to dark styles, while soft ware is more suited to light styles.

Malt

Among malts, barley is the most widely used due to its high amylase content, and a digestive enzyme that facilitates the breakdown of starch into sugars. Depending on what can be cultivated locally, other malts and unmalted grains can be used, such as wheat, rice, oats, and rye.

Malt is obtained by soaking grain in water, allowing it to germinate, then drying the germinated grain in a kiln. By malting the grain, enzymes will eventually convert the starches in the grain into fermentable sugars.

Beginning Wine Tasting

Wine really does deserve some serious attention if you ask me, it’s a lot more than just a drink. It is for this reason that I find it very strange that there is no defined tasting procedure which has a universal acceptance. It is common that the majority of wine tasters follow their own set out plan when tasting and this will vary from person to person. Most of these steps, whilst having their place in the vineyards would be frowned upon at the dining table, they involve a set of steps which to the layperson would appear quite ridiculous. The difference can be akin to that of a persons preference to a particular style or genre of music. The world of critical wine tasting is a comparison between a real standard and the wine in question, drinking wine with a meal is greatly different to this and the wine is undoubtedly intended as an accompaniment to the meal and as a “refreshment”. Although there is no doubting the eccentric activities of a wine taster at a dinner party are perhaps not required it is worth admiring and appreciating the great talent and concentration that goes into the true appreciation of wine. From an outsiders view, these strange and sometimes occult like tastings may seem a little over complicated but with a true desire and ability to focus ones attention it is quickly possible to begin to understand and appreciate wine in a more full sense. For the basics of wine tasting we are undoubtedly in debt to the likes of Clarke and Goulden.

Where possible it is advised that you should rinse your mouth clean before tasting a wine, but obviously in a dinner party setting this is not always possible nor desired. I would however, recommend that the beginner use this method, it clears the palette and allows the wine taster to become more familiar with the basic characteristics of the wine being tasted (if in doubt, borrow from the experts!). A more experienced taster will more quickly be able to get the basic qualities of a wine and will often omit this step. Many consider that rinsing with water in this way detracts from the wine and affects palette because the water alters the sensitivity of the tongue and therefore adds a further complication in the whole process. During a long session of tasting it is quite possible that the mouth can become fatigued and therefore this instance lends itself to a revitalization with water.

Wines are best tasted in tulip shaped glasses, with the exception being sparkling wines which require a fluted glass (the elongated type you often see unused in display cabinets!). These style of glasses enhance the sparkling wines natural effervescence. If you don’t have the correct glasses (or enough if you’re having friends round) you can always loan them from a friend. It is important when comparing wines that each glass is filled to the same level (about a third full is the normal) this allows the taster to hold the glass at a steep angle to allow for a nice observation of the colour and clarity but also allows for a nice vigorous swirl of the wine which in turn releases the aromatics in the wine. At dinner party’s it’s also a useful tool when showing off, but beware there is always someone at the party who knows more about wine than you, so credit your fellow guests with some intelligence!

Beans And Roasts For Your Coffee Makers

So you need a cup of coffee to get you going in the morning
and you are probably quite happy to drink whatever brews the cappuccino machines in the office are dispensing. If it’s hot
it smells like coffee and it gives you the necessary head rush to start your day

So it may astonish you to realise exactly how many different types and origins of coffee there are out there. are grown at over three thousand feet
the perfect altitude for coffee growth. Brazils

are grown in larger quantities
at lower altitudes
on the many large plantations of the area.

When seeking the perfect coffee
most people choose ready roasted beans
although it is possible to buy the soft
green beans and roast them yourself. There are a number of categories of roast
from the light or cinnamon roast
which is strong and acidic
to the dark or city roast
a less bitter sweeter category
often used for espresso. In between is the medium or American roast
the standard used for everyday drinking and extremely popular.

Two other varieties of European roast are the full bodied French roast
and the very dark Italian roast
used in speciality espressos. Both of these are dark roasts and so the resulting brews are less acidic and sweeter than your average cup. The longer roasting process allows the sugars in the bean to caramelize and much of the bitter caffeine to burn away.

and a light brown foam on top that is the crema. Make sure to stop the process by the time the espresso has poured the maximum duration recommended for the machine. Continuing the shot past the maximum duration will result in a bitter flavor for your latte.

Once you have your one to two fluid ounces of espresso
it's time to froth and steam the milk. You could heat the milk by microwaving it or by stirring it in a pan on top of your stove. However

Are you tired of always having to go out to a bar for a couple of cold beers when you really just want to take it easy and relax a bit? Have you ever thought about how much money you spend when drinking out in public? For anyone who’s had to put off their car payment for another week just because of last Saturday night
the solution is simple; beer taps right in your own home!

Buying draft beer by the keg not only costs much less but the quality and experience goes up as well. A draft beer system is a fairly simple way to enjoy great beer without going anywhere. A draft system uses gas (usually CO2 or a blend of nitrogen and CO2) to push beer from the keg right out of the beer tap handles and into your glass. Beer must remain in between 38-40 degrees Fahrenheit for two reasons: for proper pouring and to maintain the freshness of the beer
as it is not pasteurized. It can be a bit more complicated with multiple beer taps
but the basics remain; consistent temperature and a proper pressure level of gas.

At home beer taps are fairly simple in design. A small tank of CO2 attaches to a regulator
which reduces the pressure down to 10-12 psi. A hose goes from the beer tap handles to the keg. There are a variety of beer tap handles that go along with certain kinds of beers. All beer tap handles have a screwing or keyed fitting that hooks up to the keg and another hose that runs to the faucet where the beer is poured out. Tap handles usually run anywhere from $15-$150
depending on what style and brand you choose.

Most of the domestic keg coolers are designed to hold a pony keg
or about ผ of a regular sized keg. Some larger coolers are made for restaurants that hold ฝ of a keg. There are also conversion kits where you can actually turn your old refrigerator into a keg cooler. It is a good idea to test out the size of the keg you’ll be using with the fridge before building it to completion. Local beer distributors will more than likely loan you one for a small deposit down. After that
it’s as simple as measuring a frame around the keg to make sure your cooler is big enough to hold the size keg you want.

A five-pound tank of gas is usually enough for about 5-7 half kegs and is relatively inexpensive (between $7-$12) to refill. Regular cleaning should be done to maintain proper flow through the system and to keep the taste of the beer great. This can be done by regularly running clean and hot water through the lines every couple of weeks or so. Whatever system you go with
there’s a lot to be said about being able to stay in your own home and still being able to enjoy your favorite draft beer just like at the bar.

Buffalo was once the chief source of meat for many Native Americans before the animal nearly became instinct over two centuries ago. However
because of its many health benefits and other factors

Private ranches are now raising buffalos in a bid to fill the growing demand for buffalo meat but the supply remains miniscule compared to the supply of beef
making it presently relatively expensive. Despite the costs however
buffalo meat has many advantages over beef which makes it an ideal meat alternative for the health conscious.

For one
buffalo meat has 70% to 90% less fat than beef and half the cholesterol. Further
because they are stronger than domestic animals
they don’t require growth hormones and artificial substances to get them to size. In appearance
buffalo meat is similar to beef except that it has a darker reddish color. Connoisseurs however say that buffalo meat has more flavor than beef and is just as tender.

Buffalo is also as versatile as beef and has similar cuts. It can be used in any beef recipe but has to be prepared and cooked differently because it cooks faster than beef due to the absence of fat within the muscle. Fat acts as an insulator which tends to slow down cooking time so with less fat content
the meat will cook faster.

To prepare a buffalo steak
experts advise putting olive oil on each side before cooking in order to keep the meat moist. The key is to go “low and slow”. One should turn the buffalo steak over often and cook at a lower heat than steak. Also use slower cooking times but avoid overcooking the buffalo as this could dry the meat out. If you are using a gas grill
experts also advise keeping the lid closed to keep the moisture in. If you are cooking buffalo meat in the broiler meantime
it is advised to move the oven rack a notch lower than what you would use to broil beef. Chefs however advise against using a broiler to cook buffalo meat. If you are using the stove
the stove should be turned to medium. Ground buffalo meat can also be used as a substitute for ground beef but it is well to remember that buffalo does not shrink in size when cooked.

In general
an 8 ounce buffalo steak will take about 10 minutes to prepare medium. Studies show that buffalo cooked at a medium temperature produces the tastiest results but if you want your buffalo steak well done
you may want to consider cooking at a very low temperature (180 – 200F) and for at least 10 hours. When cooking buffalo steak
the basic guidelines to remember are to use lower heat and to retain the moisture. One way of sealing in buffalo’s natural juices is to sear the meat on both sides. Because
buffalo cooks faster
you should expect that compared to beef cooked to the same degree of doneness
buffalo steaks or burgers will be ready faster.

Arabica Or Robusta Your Guide To Coffee Beans

If you are buying coffee beans for your business and not sure what you should be looking for

The two main varieties of coffee plant are arabica and robusta. Arabica originated from Ethiopia

Antioxidants are substances that help our bodies fight free radicals-natural but toxic chemical reactions that occur in our bodies and damage our cells. Different antioxidants combat different free radicals
so it's wise to know and use a wide range of antioxidant foods and vitamins that help preserve health and vitality.

Vitamin C is a well-known antioxidant vitamin. Foods that contain the antioxidant properties of Vitamin C include oranges

Anti-aging Theories Part II

Waste Accumulation Theory

The waste accumulation theory of aging states that in the course of a life span cells produce more waste than they can properly eliminate. The waste includes various toxins that when accumulated to a certain level they can interfere with normal cell function and ultimately kill the cell.

Limited Number of Cell Divisions Theory

This theory is concerned with the number of cell divisions directly affected by the accumulations of the cell’s waster products. As more wastes accumulate over time the cells quickly degenerate thus causing aging and ultimately death.

Hayflick Limit Theory

Dr. Hayflick theorized that the aging process was controlled by a biological clock contained within each living cell. Studies done in 1961 concluded that human fibroblast cells (lung
skin
muscle
heart) have a limited life span. They divide approximately 50 times over a period of years and then suddenly stop. They also concluded nutrition seemed to have an effect on the rate of cell division. Final conclusion of this theory states that improper functioning of cells and loss of cells in organs and tissues may be responsible for the effects of aging.

Death Hormone Theory (DECO)

Brain cells or neurons are unlike other cells in that they do not replicate. At birth we have roughly 12 billion of them and over a life time about 10 percent die out. Dr. Donner Denckle speculated that as we age the pituitary begins to release DECO which inhibits the ability of cells to use thyroxine. Thyrozine is a hormone produced by the thyroid-governing basal metabolism
which is the rate at which cells convert food to energy. The metabolic rate brings on and accelerates the process of aging.

Thymic-Stimulating Theory

Dr. Alan Goldstein says “the thymus is the master gland of the immune systems.” The size of the gland continues to reduce and shrink to round three grams by age 60. Scientists are investigating the possibility that the disappearance of the thymus contributes to the aging process by weakening the body’s immune system.

Mitochondrial Theory

This is the free radical theory is supported by directed experimental observations of Mitochondrial aging. Our primary source of energy comes from ATP. Mitochondria are the energy-producing organelles in the cells that produce ATP. They produce cell energy by a process that leads to forming potentially damaging free radicals. Evidence seems to tell us that various kinds of accumulated DNA damage over time contribute to disease. New research in mitochondrial repair could play an important role in the fight against aging.

Errors and Repairs Theory

Dr. Leslie Orgel suggested in 1963 that because the “machinery for making protein in cells is so essential
an error in that machinery could be catastrophic.” Since the system is incapable of always making perfect repairs on these molecules
the accumulation of flawed molecules can cause disease and other age changes to occur.

Redundant DNA Theory

This theory is similar to the error-and-repairs theory in that it also blames errors accumulating in genes for age changes. A difference is that as these errors accumulate the reserve genetic sequences of identical DNA that take over until the system is work out.

My primary negative comment about this mixer is that
for some jobs
it’s just not large enough. It says that you can mix nine dozen cookies- but not if you want anything in those cookies. For about 4 dozen chocolate chip cookies
the mixer really has to work.

Even when it can mix all the ingredients
by the time you are done filling up the bowl
the mix is really high on the sides and it can spill easily. So I always shoot for smaller recipes or make the larger ones in two batches.

this is a great mixer for everyday chefs who are just starting out or even for those who have many years of experience under their apron but are looking to purchase a basic stand mixer.

iced tea can also be taken sweet. Superfine baking sugar or bartender's sugar should be used to sweeten the flavour. Other options including preparing sugar syrup on the stove using a 1:1 water and sugar and simmering the mixture for a few minutes. The sugar syrup will keep in the refrigerator for up to two weeks.

Iced tea may be made by cold or hot steeping. In cold steeping
dry tea leaves are placed in a clean jug filled with an appropriate amount of cold water. The infusion is refrigerated for at least six hours or overnight
and then strained into a second jug or container. Sugar or lemon may be added prior to serving.

To brew iced tea using the hot steeping method
three options are available:

Method 1
Use twice the quantity of dry tealeaves that you would ordinarily use for hot tea. Infuse in hot water for five minutes
and then pour over a full glass of ice. For best results
let the tea cool before pouring it over ice to prevent clouding or creaming down.

Method 2
Double the tealeaf amount
steep for 5 minutes in hot water
and then pour the infusion into a container with the same amount of cold water. This method dilutes the strong tea and prevents clouding.

Method 3
Steep black tea in boiling water for 5-8 minutes. Strain the brewed tea into a container containing cold water
and then add sugar or lemon to taste. If you brewed too strong a concentrate
it will be diluted when poured over ice. If you still find the tea too strong
you may add a little water until you have the perfect iced brew.

Many people enjoy mixing their iced tea with an equal amount of lemonade or other fruit juices. Take care that the juice does not overpower the flavour of the tea. Sweetened

Alternatives To Decaf Coffee

So you are a coffee lover
and you have all the gadgets and gismos to make that perfect cup. You know all the different coffee types available and your idea of a perfect Sunday morning is to relax with your favorite newspaper and a giant mug of a classic Columbian brew.

So what happens when for health reasons you are told to cut down on the coffee? There are so many reasons these days why you might need to cut down on your caffeine intake
perhaps you are pregnant
or suffering from a heart condition that makes excessive caffeine consumption unwise. As a coffee connoisseur the idea of drinking decaf leaves you cold
but when it is a choice between your health and your coffee you probably don’t have much choice. To make your transition easier
there are few things to consider before you stock up on decaf beans.

Be prepared to spend a little extra on high quality decaf to get a decent taste. There are various processes used to remove caffeine from coffee beans and the most economical uses chemicals to accomplish this. Although the chemicals are washed away
small traces can remain that impact the taste of the resulting brew. Some of the good coffee flavor can also be washed away with the caffeine.

Some more expensive decaf beans go through the Swiss method
where the beans are heated with water and then passed through activated charcoal
which bonds with the caffeiene
leaving the beans with reduced caffeiene but the majority of their original taste.

Another
more recent addition to these processes is known as Hevla. Coffee beans are steamed at high pressure and the caffeiene removed
without any real impact on the flavor. The use of this process is becoming more widespread
but is unlikely to be used on the standard decaf for sale in your local supermarket.

As well as checking the manufacturing process when buying decaf coffee
you should also have a careful look at the caffeine content. You may think you have been clever enough to find a great decaf that tastes just like regular coffee
for a reasonable price. You may in fact find that the caffeine content is only slightly reduced
hence the taste
and you can probably do yourself almost as much damage with this as with a regular brew. Also beware of drinking decaf coffee when you are out and about. Because the same machines are used to make decaf as regular coffee
you might unintentionally be getting a large dose of caffeine anyway.

If you really can’t stomach changing to decaf
you could just reduce the amount of coffee that you drink and really savor those occasional cups. You could also switch to a darker roast such as an Italian roast
popular for espresso making
which is naturally low in caffeine because most of it has burnt off during the roasting process.

So don’t despair when your doctor gives you the bad news. Just because you have to cut down on caffeine
this does not mean that you have to give up your coffee altogether.
